Take your Simões Azeitão DOP out of your refrigerator 2 hours before, in Winter, and 30 minutes, in Summer. It should be served at room temperature to recover all its sensory, aroma, flavor and texture qualities.
Put the cheese on a base. The cut should be done in half, so you can enjoy the buttery cream deforming slowly.
Then, cut it into small slices and serve.
If the consumption will be fast, you can open the cheese at it’s top, by stripping him of his "cover" and serving with a spoon.
The Azeitão cheese is a sheep Portuguese cheese,
originated in the region of Azeitão in the district of Setúbal.
It’s a protected designation of origin
